FINNISH LEMON-CHEESE DESSERT TORTE (cont.)

.... This is my aunt Pakke's secret recipe but since she lives in Finland, I don't think she'll ever find out. In any case, my first year Finnish class always bakes this torte in class. It's very fast to make - and you need only one bowl which does NOT need to be washed between mixing the crust and the filling.

Crust:

  • 1 cup flour
  • 2 Tbsp sugar
  • 1/2 cube butter
  • 1 tsp baking powder
  • 1 egg

1. Mix the dry ingredients
2. Cut the butter in
3. Add the egg

Line the torte pan with the batter, also on the sides

Filling:

  • 1 cube butter
  • 1 3/4 cup sugar
  • 1/2 lb + *rahka (see note)
  • 2 eggs
  • Grated peel + juice of 1/2 lemon
  • 2 tsp vanilla

*rahka = curd (occasionally available at the Berkeley farmer's market or at the Cheese Board; baker's cheese or even farmer's cheese works well)

1. Beat the butter and eggs well.
2. Add 'rahka'
3. Add the eggs, beating while adding them
4. Add the lemon + vanilla

Pour the filling into the pan. Bake at 350-375 F for about 50 minutes. It's very light when done.
